Tradition and Innovation

We have 16 hectares of vineyard, of which 11 are sangiovese, and 5 hectares of Merlot, Cabernet Franc e Cabernet Sauvignon. Half of these are planted at high density.

Our approach blends together tuscan and french tradition The renowned enologist of the University of Bordeaux, Yves Glories, led us in our first steps in the first years the 2000 millenium, helping us import french plants, and planting them narrowly spaced.

Loyal to our french inspiration and Glories’ teachings, the process of vinifcation includes fermentation at controlled temperatures in stainless steel tanks and maceration for a few weeks. We transfer the wine, in order to filer it without clarifying it, in our cellar for vinification.
The wine is then aged in small french oak barrels, in the aging cellar located underneath the main villa.
Thanks to our international yet traditional approach, the 80.000 bottles we produce ever year are exported all over the world.

At the same time, we are passionate about sustaining new techniques and approaches. We are proud participants of the experimental vineyards of the local consorzio. Part of the “Chianti Classico 2000” (CCL 2000) project, the study analyzed fundamental themes for modern viticulture in specific wine varieties.

Since 2023, we are introducing more techniques of sustainable agriculture, using as little chemicals as possible, monitoring the forests, and cultivating a balanced portion of the fields so as to maintain the local biodiversity.

In October 2023, Siena Food Lab selected Castello di Selvole as part of the innovative project that researches Agriculture of Precision, Sustainability and Tracebility.
